Banana Peanut Butter Fudgsicles

Cool, creamy, and decadently delicious, fudgsicles are a nostalgic summer treat that brings back fond childhood memories. But what if we took this classic frozen delight to a whole new level? Combining the rich flavors of chocolate and peanut butter with the natural sweetness of bananas, these homemade fudgsicles are the ultimate indulgence on a hot summer day.

These peanut butter chocolate fudgsicle pops are a great wholefood alternative to store bought ice-cream bars. I love all the yummy fats I add to this recipe like peanut butter and extra virgin coconut oil that helps to balance the sweetness of the ripe bananas, keeping my blood sugars happy. It’s also great for picky eaters. I got my tiny human to help with assembly in the hopes that he’ll enjoy these bars too.

Banana Peanut Butter Fudgsicle Pops


Ingredients

  • 4 firm, ripe bananas
  • ¼ cup unsweetened peanut butter
  • ¼ cup extra virgin coconut oil (melted)
  • 3 tbsp dark unsweetened cocoa powder (or melted 90% dark chocolate)
  • 8 popsicle sticks

Method

  • Cut bananas in half and insert popsicle sticks. Freeze for 15 mins
  • Melt peanut butter in microwave for 10 seconds
  • Make chocolate fudge by mixing cocoa powder and coconut oil OR melt your dark chocolate
  • Pour melted peanut butter in a ziplock lined cup
  • Pour fudge in a ziplock lined cup
  • Remove bananas from freezer
  • Dip banana in peanut butter. Return to freezer for 15 mins
  • Remove peanut butter covered bananas from freezer and dip in chocolate
  • Return to freezer for 15 – 30 mins. ENJOY!
