Gluten-free, dairy-free, low-sugar, paleo, pcos-friendly
When it comes to classic desserts that perfectly capture the essence of summer, few can rival the mouthwatering appeal of peach cobbler. The combination of juicy peaches, warm spices, and a buttery, biscuit-like topping makes this timeless treat a beloved favorite for many.
I know, I know. What does this Jamaican girl know about this classic American dessert? After all, there are no peaches grown in Jamaica ( I think). My first taste of it was at a small house party in 2011. I watched as the hostess, effortlessly went into her kitchen and whipped up the dessert. She served it hot with some vanilla ice cream and I was in awe at how delicious (and easy) it was to whip up.
Now, that was before my gluten-free, sans-dairy days. Of course my IBS had a field day after this dish, but back then, I was oblivious to why I felt horrible after what felt like every meal.
Anyways, fast-forward a few years into my “Nouriched” life. With a can of peaches given to me by my mom (who had no interest in canned fruit when fresh tropical fruit abound!) I remembered the dish and decided to give it a go, trying to recall what I saw so many years ago. I think I captured the essence of the dish – the sweet, soft centre and the buttery, biscuit-like topping bursting with warm flavours like cinnamon and nutmeg.
Nouriched Adaptations
My recipe has a few adaptations that fits well into most diets and healthy lifestyles. For one, its a mini cobbler, so you won’t have the opportunity to binge on too much of it. The cobbler is great for persons with gut sensitivities by being gluten free and dairy free. It’s also paleo friendly for those on that protocol. There’s also no (or very little) added sugar to this dish, which could make it the perfect dessert for diabetics and those struggling with insulin resistance!
The dish comes together in a short time and requires very little prep. Most gluten free kitchens already have these ingredients. All you’ll need is a can of peaches if that’s not already in your pantry!

Mini Peach Cobbler Recipe
Ingredients
- 3 tbsp almond flour
- 3/4 tbsp cassava flour
- 1/4 tsp baking powder
- 1/2 tbsp butter
- 1 tsp vanilla
- 2 tbsp* unsweetened almond milk (or enough to bring the dry ingredients to make a batter)
- 1 egg
- 5 – 8 slices canned peach (drained)
- pinch cinnamon
- pinch nutmeg
- pinch salt
- 1/2 tsp brown sugar (optional)*
Method
- Preheat your toaster oven or airfryer to 350 degrees.
- Combine almond flour, cassava flour, baking powder, spices, salt together
- Add egg, vanilla to dry ingredients. Combine to make a batter. If needed, add the almond milk a tablespoon at a time until the mixture is the consistency of pancake batter. Set aside
- Put the butter is a small microwave safe ramekin and heat in the microwave until melted (around 10 seconds).
- Carefully remove the hot ramekin from the microwave
- Slowly pour the cobbler batter into the ramekin with the butter. Do not stir.
- Add peaches in a single layer to the batter. Do not stir.
- Sprinkle the brown sugar over the top of the cobbler for a caramelized top
- Bake the cobbler in the oven or airfryer for 20 mins or until done
- Serve warm with ice cream and enjoy!

This recipe yields 2 sizeable servings at 194 calories per serving, but I usually have this stretch to 3 or 4 servings because I find it so dense and filling, post a good dinner (and I also love having it with a scoop of my homemade vanilla ice cream, so I gotta leave space for that too!)
